Southern Fried Green Tomatoes and eggplant





We had a dish a while back of tuna and orange white beans that was not as good as we thought so we gave it a try again and much better with fresh basil and a a better orange. See the side and click on tuna to see the recipe.
No..... the star of this meal was the fried green tomatoes as they are in abundance at the farmers market we go to. We also picked up an eggplant. Our tomatoes are coming in now but we wanted them to be ripe to taste as they are new to us.
Now we have cheated as we love Zatarains fish fry and used it in our of flour and corn meal. Made it spicier. Now we do sweat our eggplant and for those who don't know that is where we slice it and sprinkle salt on both sides and let stand for about 10 minutes. We do find this takes our the bitterness.

I never sweat the eggplant. I peel it, slice it, dip it in beaten egg then in cornmeal. Fry. Eat with LaChoy's Lite Soy Sauce and slap myself silly a couple of times.

that looks like one tasty dish. I have to say, i have never sweated the eggplant either. does it make a difference?

I've tried both sweating, and not. Neither one works for me. Eggplant is a thing that some one else has to cook for me. That's the only way I can enjoy it.

Question re: tomatoes. What are the little lines that look like a trail on the heirlooms? Mine are coming up nicely, but for those lines. I noticed it on yours as well so not as worried. Do you know? Thanks, Keri @ www.samwich365.com or www.alwayscurtsywhenyousneeze.com

Hey Red we have never tried with soy sauce will have to give it a try sounds good.

Jack we have tried it both ways if you sweat the eggplant it seems to not be as bitter to us. We feel to fry it the sweating is not as necessary. We just thought we would try it this time.

Hi Keri
Not sure about the little lines on the tomatoes. We do have cracks in them because of the water they absorb at a time and a few have split open. We have had some brief heavy down pours which we are not complaining about as it has helped cool things off. Now the one called Black and red boar are red and green striped. We like that they are not perfect like in the grocery store these have character.

That sure is a yummy looking plate! What kind of meat is that on top of the beans?
