Bisquick Pancakes

We have had a craving for some pancakes lately. I know not on the diet but it has been a really long time since we had any. And we really like the Bisquick ones like I had as a kid.
So go out and get a box of Bisquick and follow the directions. And they did not pay me anything for this blog but all donations are welcome.

I'm back

Wow can not believe its been this long with out posting. Baby is finally back and she can get my pictures set up to post.

I have to admit we have not been cooking any thing much new but some of our older stuff as it was good the first time and we felt like revisiting it.

I have been working on poaching eggs and this is our Will McMuffin for breakfast.
Poach egg, slice of Canadian bacon and some cheese.
Wife added a new button so now the recipes can be printed.

Poached eggs

I guess most foodies have watched the Julie and Julia movie. We loved it.We happened to catch a show with Julia Child poaching eggs. I don't know what happened to me but I have become obsessed with a poached egg. This is something I have not done before so I tried several ways. Shallow pan, vinegar, in a ring (don't use a mason jar top the little grooves keeps the egg from coming out looking pretty.) So after several weekends I think I can do a pretty good poached egg. So go out there and give it a try. Here are some I did over the weekend.

Fried egg

Yes there is a fried egg under this, we had some left over sauce from our previous post and used it on the eggs with a few more shrimp added. We also read about the health benefits of honey and cinnamon and have been adding it now to our coffee and this is some on a banana

2 tablespoons of honey to one teaspoon cinnamon

This is supposed to help with cholesterol and a whole host of other ailments.

Using this has cut out the sugar wife adds to her coffee. Also can use in tea.

I would like to thank Deanna of Deannas Corner for the reminder of this dish I had a good bit growing up as a child and have not fixed in very long time, the bird in a nest. Her site has how to fix this so please visit.

Figs on a Hot Biscuit

Cooked down Figs

2 cups fresh whole figs
1 ½-cup sugar (can add more if you like them sweeter)
½-teaspoon lemon juice
Dash orange zest
1 cup water (add more if needed)
Cook on top of stove in saucepan until cooked down. Stirring occasionally until the figs gets thick about 30 min to 1 hour at low heat.

Will keep in frig for 3 to 4 days.

We make just enough for the two of us at a time. In addition, we somewhat just taste it until we have it to our liking. We really do not have a recipe for this.

Brunch in the country

As stated before we have a brunch on weekends as I have more time and I like to sleep a little later on the weekends. After 4 days of 7:30 to 5:30 days, those few extra hours in the bed on Sat sure feel good. Of course, if the cat’s food bowl is empty they will worry you until you get up and feed them.
Here in the south, I grew up during the summer eating tomatoes any time and that meant at breakfast. I am so lucky we are able to get some good tomatoes from the farmers market but even better form the neighbors in the neighbor hood and not have to worry about the dreaded salmonella.
We have put up some asparagus and the way its going I may not have any left for the winter.
This is hash brown potatoes, fresh tomatoes, cheese grits with shrimp and scrambled eggs with asparagus, and shrimp. I really do not have this written down as I just winged it over the years.

Bacon and Rotel Quiche

This turned out real good.. We had some bacon in the freezer we need to use up so this fit the bill. Even though we used a deep dish there was still a little spillage.

by ~Nimz~ 1¼ hours 15 min prep 1 pie
1 prepared 9 inch pie shell deep dish
10 slices bacon, cooked and crumbled
1 (10 ounce) can diced tomatoes with green chilies (Rotel, drained)
1-2 green onion, chopped
1 cup cheddar cheese, graded (I used 4 Cheese Mexican blend)
1 cup milk or half-and-half
6 eggs
kosher salt
white pepper

Preheat oven to 400 degrees.
Bake pie crust for about 10 minutes or until lightly browned.
Sprinkle crumbled bacon, onions, Rotel and cheese over crust.
Whisk together the eggs and milk in a separate bowl.
Salt and pepper to taste.
Pour egg mixture into crust.
Bake until knife inserted into center comes out clean, about 45 minutes.
