Baked Salmon with Basil Pesto and Tomatoes

We made this before really good home grown tomatoes are coming in and we know this would be soooo much better with a home grown tomatoes.
2 salmon fillets about 6 oz each
2 tsp. olive oil
4 tsp basil pesto (we bought some from Sams but later this year we are going to try the real thing.)
we used 1 Roma tomato.
Preheat oven to 450
Tear two pieces of foil big enough to wrap salmon with some overlapping.
Place 2 tsp. of oil on foil in center place salmon on top of oil.
Spread each piece of salmon with 2 tsp each then arrange tomatoes on top.
Wrap other piece of foil on top and seal edges.
Place packet on baking sheet and cook 15 minutes
Remove from oven and let sit 2-3 minutes. Open carefully and serve while salmon and tomatoes are hot.

Cauliflower and Salmon


We have posted the salmon I think at least it is just lemon juice salt and pepper a little ginger and teriyaki sauce in a plastic bag and put fish in and place in frig. till ready to cook about 2 hrs. Then place in skillet and cook till flaky. And the potatoers are crash potatoes we featured them before on 6/26/08.
We love cauliflower so this was a real easy one to do and you can use what ever spices you like.
1/2 large head of cauliflower
2 Tablespoon olive oil
pinch or two of sea salt
1 clove garlic
1 small bunch chives chopped
zest of one lemon
grated Parmesan and we added some crushed red pepper
Cut cauliflower in tiny pieces about the size of a grape
Heat olive oil and salt in large skillet over med high heat
When hot add cauliflower and stir until florets are coated.
Cook till pieces are golden brown about 6 minutes, remove from heat and stir in chives, lemon zest, and place Parmesan cheese and pinch of sat and serve immediately.

Salmon with Lime and Cilantro


We have had meat for the last few blogs so its time for a fish. The only problem with this dish is it is the second time we have fixed it and it is so good that we have not wanted to try a new recipe. So we hope you try it and like it as much as we do. We had fried eggplant and fresh green beans with new potatoes. Just look on side bar for recipes for them.

4 salmon fillets
1/4 cup fresh lime juice
2 Tablespoons soy sauce
1 teaspoon sugar
1 Tablespoon fresh cilantro chopped
salt and pepper to taste
Preheat oven to 450
place salmon on baking sheet and season with salt and pepper
Bake until no longer pink in middle 10-13 minutes depending on how thick
remove from pan
In a small bowl mix lime juice,sugar, soy sauce and chopped cilantro
Serve salmon with sauce [poured over it and we also but some in a bowl on the side.

Salmon with Honey glaze


This was really good and of course we got it from the Zaar and they claim it was like the dish at Applebee's. We have never had this dish there but this was a real keeper.

3/4 cup honey
1/3 cup soy sauce
1/4 dark brown sugar(packed)
1/4 cup pineapple juice
1 lemon juiced about 2 tablespoons
2 Tablespoons white distilled vinegar
1 teaspoon olive oil
1 teaspoon cayenne pepper
1/2 teaspoon paprika
1/4 teaspoon garlic powder
4 8 oz salmon fillets without skins

Combine all ingredients but salmon in a medium sauce pan and cook over med low heat.
stir occasionally until sauce begins to boil, then simmer uncovered for 15 minutes or until syrupy. Watch so it does not bubble over.
Take the salmon and rub with a little vegetable oil and a light sprinkle of salt and pepper.
Place on grill and cook 4 to 7 minutes per side or until done.
We did this on our George as it was raining(seems like we have got a lot of rain this year) and it turned out fine but we will have to try on the grill as wife loves stuff cooked on the grill.
Serve salmon with the sauce over salmon and a little in a cup on the side.
