Pasta and Cauliflower


This is one I debated about posting. I like to only put ones we would a least considered a 4 or above star rating but wife liked this one much more than I did.
I really can't believe I did not like it as we love cauliflower in most anything and we thought with pasta it would be a no brainer. There are several recipes like this one out there. I think it was the anchovies that were to much for me. This comes for the Simply Recipes site.

Moroccan Chicken Casserole




Wife made this and the whole house smelled great when I got home. But I must say it did not ring my bell as much as it did hers. In all fairness it was better the next day.
Funny when something has all the ingredients you love but does not rock the boat.
I think it had to much ginger and that it was a little overpowering so if you are not used to ginger very much I would half it.
1 head cauliflower
2-3 pounds chicken
2 Tablespoons butter
1 onion finely chopped
1 Tablespoon ginger finely chopped
2 cloves garlic finely chopped
2 carrots chopped 2 teaspoons cumin
1 teaspoon paprika
1/2 teaspoons turmeric
1/2 teaspoon cinnamon
1/4 teaspoon cayenne
1 red pepper cut in thin strips
28 oz can of diced tomatoes
1/2 cup minced cilantro
2 teaspoon salt
1 lemon
Preheat oven to 375
The base of the casserole is cauliflower grated into a rice like texture. spread the cauliflower in a 9x13 greased baking pan
Salt and pepper chicken and melt 1 teaspoon butter in a deep skillet over high heat.
Brown chicken about 3-5 minutes on each side. Remove to side
Turn down heat to medium and onion,ginger,garlic,and carrots. Cook till onions are soft, add remaining butter and all spices and stir well.
Add red pepper,can of tomatoes cilintro and salt. Return chicken to pan and simmer for 3-5 minutes.
Pour the chicken mixture over the cauliflower and make sure it is all covered by the sauce.
Slice a lemon in thin pieces and lay on top. Cover the pan and bake for 35 minutes. Remove the foil and cook another 25 minutes more. Garnis with clintro.

Cauliflower and Salmon


We have posted the salmon I think at least it is just lemon juice salt and pepper a little ginger and teriyaki sauce in a plastic bag and put fish in and place in frig. till ready to cook about 2 hrs. Then place in skillet and cook till flaky. And the potatoers are crash potatoes we featured them before on 6/26/08.
We love cauliflower so this was a real easy one to do and you can use what ever spices you like.
1/2 large head of cauliflower
2 Tablespoon olive oil
pinch or two of sea salt
1 clove garlic
1 small bunch chives chopped
zest of one lemon
grated Parmesan and we added some crushed red pepper
Cut cauliflower in tiny pieces about the size of a grape
Heat olive oil and salt in large skillet over med high heat
When hot add cauliflower and stir until florets are coated.
Cook till pieces are golden brown about 6 minutes, remove from heat and stir in chives, lemon zest, and place Parmesan cheese and pinch of sat and serve immediately.

Cilantro Lime Mayonnaise with shrimp,oysters and fish







OK we just love cilantro. With that said, the other day when we were in town we did a bad thing and went threw a drive Thur as we were starving and it was another 45 min to an hour home. So we whipped into a place we have not been to in I guess about 4 years. Bugger King.
(One of the bad things about a new HD TV is all the food commercials just kill us especially the Olive garden and there is no were to go to get even a Burger unless you drive 16 miles)
On their menu was a limited time only a fish sandwich with cilantro lime mayo. Needles to say we got one and it was delicious and of course our next thought was we can make this at home!
So we turned to our trusty computer and found this one by epicurious. We were going to have our Seafood night with this. We are also thinking of salmon burgers with this at another date.
We use the Zatarains fish fry as our batter for our catfish, and the shrimp, oysters and we also did some cauliflower with it.
1 cup packed fresh cilantro leaves
3 Tablespoons fresh lime juice
1 garlic peeled
1 teaspoon Dijon mustard
1/4 teaspoon hot pepper sauce
3/4 cup mayonnaise
Blend all first 5 ingredients in processor until cilantro is finely chopped up. Add mayo and process to just blend. Season with salt and pepper cover and chill. Should keep up to one month. That's if it last that long.

Swiss, Ham,Cauliflower and Potato soup


Last Friday was a really dreary day with rain and damp and generally feeling like we need to be building an ark around here. For the month of October we have more rain than normal. This recipe did not have cauliflower in it but since we had half a head of one to use up we threw it in and no one would even know it was there as it blended in so well. So as the rain came down wife and I enjoyed this soup. By Susie on Zaar

2 med potatoes peeled and diced.
1/2 cup margarine (we use smart balance)
1/2 cup flour
2 green onions chopped or 1/2 yellow onion (we used yellow onion)
2-3 cups milk
4 slices swiss cheese
2 cups diced cooked ham
salt and pepper to taste
we also added a little garlic--- every thing can use some garlic
and we had some cooked bacon in the frig that we used as garnish.

Cook potatoes in saucepan in just enough water to cover, when tender drain and set aside and save liquid.
melt margarine, saute green onions or yellow onion until tender (we add garlic here). Remove onion and set aside.
Add flour to melted margin and stir until incorporated. Stir till the flour turns a golden brown (this is called a roux.)
Using a whisk stir in 2 cups of milk and 1 cup of saved potato liquid. Whisk until smooth and no lumps are seen.
Bring to a boil or until soup thickens.

Add diced ham, cooked onion(and garlic), swiss cheese (and cauliflower) Stir till cheese is melted.

Add salt and pepper to taste.

If soup is too thick add 3rd cup of milk if needed.

Garnish with bacon.
