Chicken Artichoke Casserole


Wife said she felt we dining out with this dish and it was a good date night dish. Note to self must make again. As you can tell we really liked this one and sometimes chicken can be so bland but this was a cut above and really easy. As they say your friends will think you slaved all day in the kitchen.
4 chicken breast halves
4 Tablespoons butter
8 oz sliced mushrooms
1/2 onion cut
2 cloves garlic
1 jar (14 oz) marinated artichokes,drained
2 Tablespoons flour
1 1/2 cups chicken broth
salt and pepper to season the chicken
In a skillet brown seasoned chicken, lightly in butter.
Transfer to a baking dish. Add mushrooms,onion and garlic to skillet and saute for a few minutes, until lightly browner, remove and spoon over chicken pieces.
Add flour to the remaining butter and stir to blend, add broth and cook till thickened. Pour over chicken and bake at 350 for 45 minutes.
We served over rice.

Broiled Cod


Wife loved this I thought it was good but not as much as she did.(I just liked it fried better I think). The recipe came from all recipes and they claim it taste like lobster. As it has been a really long time since I had lobster I could not tell you if this is true or not but all in all this was lip smacking good.
2 6oz cod fillets (we used frozen)
2 cups water
1/3 cup white sugar
2 tablespoon salt
1/2 cup butter melted
dash of paprika
Preheat boiler and lightly grease cookie sheet
Place fish in large saucepan, mix together the water,sugar,and salt and pour over fish.
The mixture should cover the fish. if not add more water. Bring o a boil for about 3-5 minutes.
Remove fish from water and blot on paper towels o remove excess water.
Brush with 6 Tablespoons of melted butter and sprinkle with paprika
Broil 8 to 10 minutes per inch of thickness or until they are golden brown, serve with remaining butter.

Chicken quesadilla




Well this is what we call it. We took one large chicken breast and chopped it into small pieces and seasoned with taco seasonings as much as you like. We cut up some onion,bellpepper,mushrooms. Use as much as you want we were only making two but you may want to make more.
saute all together place on a flour tortilla and sprinkle mexican cheese and fold and cut in wedges. Serve with salsa and you can add sour cream.

Sunday Cat Bootise Boots 92-11


Well it is another sad good by for another one of our babies. Boots was Spits brother and the last of my wife's cats from before we got married. He had a good life with us we know he is now in a better place. Boots is the only cat we have had who had almost golden moon eyes. They were not full round but what wife called bedroom eyes kinda hooded.

Fish Sandwich


We thought we would try a fried cod fish sandwich. This was so good! I used Zaterains fish fry and a egg wash. We placed on a hogie with cilintro mayo.
Take fish and pat dry. coat with fish fry dip in egg and then fish fry again. Cook till golden brown.

Chicken Livers


To show how much I love my wife I cooked these for her. I just can't eat them, now I love beef liver and onions but not fried chicken livers.
pat the lives dry
roll them in (I used Zaterains fish fry) flour
dip in egg wash and reapply flour
drop in hot oil and serve immediately.

Mr Gray


This beauty showed up last April and stayed around the house. Unfortunately he is a stray and feral and did not let us get near him. He was always there and ate after the girls ate. This spring he has matured into a Tom and now he has disappeared. We have not seen him for over a month now and fear the worst for him. Sure wish others would get their pet spayed and neutered. We hope he shows up but if past history repeats we will not see him again. Here's hoping you are all right Mr Gray you are a beautiful cat.

Mexican Beef Casserole



This was a good beef casserole that is a weight watchers recipe. We did add a little more chili powder, cumin and rep pepper flakes but I don't think it added any thing but a little more taste.
1 lb extra lean ground beef or sirloin
1/2 cup onions chopped (we used 1 onion)
1 can rotel tomatoes with chilies
1 can kernel corn drained
1 can black beans rinsed and drained
1 pkg taco seasonings mix
8 to 12 corn tortillas
3/4 cup nonfat sour cream
1/3 cup reduced fat Mex cheese shredded
1/3 bunch cilantro chopped to taste.
Brown ground beef and onions together for about 10 to 12 minutes, drain.
Add corn,beans,rotel tomatoes and taco seasonings mix well and simmer for 5 minutes.
Spray baking dish 2 quart 12x8 and place half of tortillas in bottom,
Spoon half of beef mixture on top, place sour cream over beef. Then layer last tortillas and then beef mixture.
Place in heated 350 oven and bake for 25 minutes remove from oven and and sprinkle with cheese.
We added some jalapeno peppers on top.
Cook for another 5 minutes or till cheese is melted. Let stand for 5 minutes and sprinkle with cilantro.

Cauliflower and Salmon


We have posted the salmon I think at least it is just lemon juice salt and pepper a little ginger and teriyaki sauce in a plastic bag and put fish in and place in frig. till ready to cook about 2 hrs. Then place in skillet and cook till flaky. And the potatoers are crash potatoes we featured them before on 6/26/08.
We love cauliflower so this was a real easy one to do and you can use what ever spices you like.
1/2 large head of cauliflower
2 Tablespoon olive oil
pinch or two of sea salt
1 clove garlic
1 small bunch chives chopped
zest of one lemon
grated Parmesan and we added some crushed red pepper
Cut cauliflower in tiny pieces about the size of a grape
Heat olive oil and salt in large skillet over med high heat
When hot add cauliflower and stir until florets are coated.
Cook till pieces are golden brown about 6 minutes, remove from heat and stir in chives, lemon zest, and place Parmesan cheese and pinch of sat and serve immediately.

Pom Juice


I got the chance to try a bottle of Pom concentrate and I must say it is a little tart or tangy. I think I will water it down a little more but it is so good for you. I do have high cholesterol and drinking a shot a day is supposed to help and has anti oxidants in it. Weather it does help or not it sure taste good..

Parmesan Baked Cod


I got a bag of cod the other day and we have never cooked this fish. We are trying to eat more fish and the cold water ones for the omega oils and stuff.
This was a real easy one to fix and it tasted good. we really liked the taste of the fish.
As you can see the picture does not look that appetizing but it was good.
3 Tablespoons each flour and corn meal
1/4 teaspoon onion salt
1/8 teaspoon pepper
2 Tablespoon butter
1 lb cod
1/4 cup grated Parmesan cheese
Combine flour,corn meal and seasonings. melt butter in shallow baking dish.
Dredge cod in flour mixture, place in dish
Turn cod to coat with butter and sprinkle Parmesan cheese.Bake at 450 8 to 10 minutes or until cod flakes.

Sunday Cat


Spring in in the air and little green buds are popping up all over the place. Also the pollen... sure will be glad when all the stuff giving me a stuffy head is gone. Mommy Socks and Gin Gin are here enjoying a nibble in the warm sunshine. They are glad all the real cold is gone. Also the bad weather is over for now. They do not like all the thunder and lightening we had a few days ago.
I have been out of town and just wore out and just now getting back to cooking. About 2 weeks ago I had to go for some test and had to fast for two days and after wards soft and bland food. So glad that's over with now.
